Ingredients:
Serves 24, 1 cookie per serving,
1 1/2 C all-purpose flour
1 C Splenda, granulated, no calorie sweetener
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg, ground
3/4 tsp cinnamon, ground
3/4 C applesauce, unsweetened
3 Tbsp egg substitute, regular, liquid
1 C zucchini, raw, shredded
1 3/4 C rolled oats, quick cooking
Directions:
Cookies;
Preheat oven to 400 F degrees. Lightly grease one or two cookie sheets with
non-stick cooking spray.
In a large bowl, combine flour, sugar, baking soda, salt, nutmeg, and cinnamon. Mix well.
Mix in applesauce.
Beat in egg, until well combined.
Add zucchini and oats. Beat well.
Spoon drops of dough onto cookie sheet.
Bake for 8-10 minutes.
Frosting pictured adds 5 points per cookie.
