Dark's Kitchen
Ingredients:
Servings 1

1 garlic clove, minced
2 Tbsp sweet onion, minced
1/2 small poblano pepper, seeded and minced
1 baby eggplant, peeled and finely diced
water, as needed
4 to 5 cherry tomatoes, halved
1 Tbsp fresh oregano, minced
Few shakes of paprika
Salt and pepper to taste
1/4 tsp cumin

Directions:

Spray a small saucepan with cooking spray.

Add garlic and onion. Cook over medium-low heat for 2 to 3 minutes.

Add pepper and eggplant and cook a few minutes longer.

Add 1 to 2 Tbsp water. Cover and cook on low for 10 minutes.

Add tomato, oregano, paprika, salt, pepper, and cumin. Simmer for 10 minutes.

Adjust seasoning, if needed.
