2 Smart Ones® Slow Roasted Turkey Breast meals
4 Portobello mushroom caps
cooking spray
1 celery stalk, chopped
1 onion, small, chopped
1 C stuffing mix
1/4 C dried cranberries
Directions:
Preheat oven to 350 F degrees.
Separately microwave each Smart Ones® Slow Roasted Turkey Breast meal according to package instructions. Set aside.
Carefully clean, but do not wash, each mushroom cap, remove stems, and scrape out the gills in each cap.
Discard gills.
Stems should be cleaned, chopped, and reserved. They will be added to the turkey filling later on.
Lightly coat baking sheet with cooking spray. Place each prepared mushroom cap, cavity side up, on prepared baking sheet.
Fill each cap with mashed potatoes from each meal.
In a large bowl, mix remaining turkey meal with diced celery, onions, stuffing mix, cranberries, and reserved mushroom stems. While mixing, gently break up any larger turkey pieces.
Evenly spoon mixture on top of mashed potatoes.
Bake for 25 to 30 minutes, or until mushrooms are tender.
