Ingredients:
Servings 4, 4 oz. per serving
1/3 C red onion, chopped
1/2 C red bell pepper, diced
1/3 C Roma tomatoes, seeded and diced
1 jalapeño pepper, seeded and finely diced
1/3 C canned corn, drained
1/2 C canned black beans, rinsed and drained
1/4 C cilantro, chopped
1 tsp hot sauce
2 1/2 tsp lime juice
2 tsp reduced fat Italian dressing
1/2 tsp chili powder
salt and pepper to taste
Directions:
In large bowl, mix onion, red bell pepper, tomato, jalapeños, corn, black beans, and cilantro. Set aside.
Dressing; In a small bowl, add hot sauce, lime juice, Italian dressing, chili powder, salt, and pepper. Mix thoroughly.
Pour dressing over vegetable mixture and toss until evenly coated.
Cover and refrigerate for at least 20 minutes before serving.
