Ingredients:
Serves 4, 1.2 banana
2 large bananas, ripe but firm
2 Tbsp pecans, chopped
4 sprays non-stick cooking spray
1/4 tsp ground cinnamon, plus extra for dusting
2 tsp maple syrup, divided
Directions:
Trim stem ends of bananas. Halve lengthwise through peels, leaving peels on. Set aside.
Cook pecans, in a small nonstick skillet, over medium heat. Stir frequently, until toasted.
Remove from heat. Set aside.
Spray grill or stove-top grill pan with non-stick cooking spray. Heat to medium.
Sprinkle cut sides of bananas with cinnamon. Lightly brush with 1 tsp maple syrup.
Cook, cut side-down, 2-3 minutes until grill marks appear.
Flip and cook until bananas start to pull away from peel and soften, 3-5 minutes.
Remove from grill and place on a serving platter.
Brush cut sides of bananas with remaining maple syrup.
Sprinkle with pecans and dust with additional cinnamon, if desired.
