Ingredients:

2 large eggs
2/3 C all-purpose flour
2 garlic cloves, chopped
1 tsp superfine sugar ***
1 Tbsp Thai fish sauce
1 10 oz. corn kernels, drained (3/4 can), divided
2 spring onions, green onions, or scallions, finely chopped
2 Tbsp sunflower oil
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
1 C sweet chili sauce, optional
Directions:
Place eggs, flour, garlic, sugar, fish sauce, half the corn kernels, salt, and pepper, in a food processor. Process into a puree.
Add onions and remaining corn kernels. Stir well to combine.
Heat oil in a non-stick frypan, over medium-high heat.
Working in batches, drop Tbsps of corn batter into pan.
Cook for 1-2 minutes on each side, until golden.
Keep warm while making remaining fritters.
Drizzle with chili sauce, or serve on the side.
*** Superfine sugar is granulated sugar that has been ground into finer crystals than regular granulated white sugar.
