Ingredients:
Serves 8
Dressing;
1 C ranch dressing
2 Tbsp taco seasoning (see my homemade taco seasoning, in Misc. recipes)
Salad;
3 C chicken, cooked, cooled, and diced
4 C chopped romaine lettuce (about 1 head)
2 Roma tomatoes, diced
1 cucumber, diced
1 C corn kernels (fresh or frozen)
4 green onions, sliced
15 oz. can black beans, drained and rinsed
4 oz. sharp cheddar or pepper jack cheese, cut into 1/4 inch cubes
1/4 C cilantro, chopped
juice of 1/2 lime
1 C crushed tortilla chips
diced jalapeño (optional)
toasted pumpkin seeds (optional)
diced avocado (optional)
jicama (optional)
Directions:
In a small bowl, combine ranch dressing and taco seasoning.
Refrigerate until ready to use.
In a large bowl, combine chicken, lettuce, tomatoes, cucumber, corn, green onions, black beans, cheese, cilantro, tortilla chips, and optional ingredients.
Pour lime juice over everything.
Stir/toss to combine.
Add dressing, a little at a time. Toss until lightly coated.
