Ingredients:
Serves 6
2 lbs pork ribs
2 Tbsp olive oil
kosher salt and freshly ground pepper, to taste
3/4 C thickly cut bacon
1/2 white onion, chopped
1 large clove garlic, minced
1 C ketchup
1 Tbsp molasses
1 Tbsp vinegar
2 tsp mustard
1/2 tsp cumin
1/2 tsp paprika
pepper, to taste
4 Tbsp water
Directions:
Brown bacon in a large pot, over medium-high heat, until crispy.
Add onion. Sauté for 6-8 minutes, or until softened. Add garlic. Cook for 1 minute, or until fragrant.
Mix in ketchup, molasses, vinegar, mustard, and water. Season with cumin, paprika, and pepper, to taste.
Bring to a boil. Reduce heat and simmer for 20 minutes. Strain mixture into a large bowl and set aside until ready to use.
Preheat oven to 350 F degrees.
Rub ribs with olive oil and season generously with salt and pepper. Wrap ribs in aluminum foil.
Bake for 1 hour. Remove ribs from oven and carefully remove foil.
Brush ribs all over with sauce. Return to oven and bake for another 30 minutes.
