Ingredients:
1 C flour
2 Tbsp onion powder
2 Tbsp garlic powder
1 tsp red pepper
1 tsp salt
1/2 tsp black pepper
4 thin pork chops
2 Tbsp bacon fat
2 Tbsp olive oil
2 C buttermilk
fresh parsley, Chopped, garnish, optional
green onions, Chopped, garnish, optional
Directions:
Mix flour, onion powder, garlic powder, red pepper, salt, and black pepper in a large bowl.
Coat pork chops in flour mixture, shaking off excess.
In a large skillet, over medium heat, melt bacon fat and oil.
Lay chops in skillet. Fry for 5 minutes on each side, until golden brown. Remove from skillet.
Mix 1/2 C flour mixture and buttermilk. Pour into skillet. Stir to combine.
Bring gravy to boil. Reduce heat and simmer until thickened, stirring often.
Return chops to skillet. Cover with gravy and Simmer for 5 minutes, or until chops are cooked through.
Season with salt and pepper. Garnish with chopped parsley and/or green onions, if using.
Optional: Sauté onions and/or mushrooms with chops. Add to gravy mixture.
