Ingredients:

1/2 C peanut butter, chunky or creamy
1/2 C brown sugar, packed
1 large egg
1 1/4 C quick-cooking oats
1/2 tsp baking soda
Directions:
Preheat oven to 350 F degrees. Grease, or spray with non-stick cooking spray,
two baking sheets.
In a small bowl, cream peanut butter and brown sugar until fluffy.
Beat in egg.
Add oats and baking soda. Mix well.
Drop by Tbsps, 2 inches apart, onto baking sheets.
Flatten slightly.
Bake for 6-8 minutes, or until golden.
Transfer to wire racks to cool.
Store in an airtight container.
