Ingredients:
Peanut Butter Graham cracker crust;
1 stick butter
1/2 C sugar
1 1/2 C graham cracker crumbs
1 bag, snack size peanut butter cups
Peanut Butter Cheesecake;
8 oz. cream cheese
1 egg
1/2 C sugar
1/4 C peanut butter
Peanut Butter Ganache;
1/2 C heavy cream
8 Tbsp butter
6 oz. peanut butter chips
2 Tbsp sifted powdered sugar
Drizzle;
6 oz. dark chocolate chips
Directions:
Preheat oven to 350 F degrees.
Crust;
Melt butter in a microwave safe bowl. Stir in sugar and crumbs.
Line an 8x8 baking dish with foil and spray with non-stick cooking spray. Press crumb mixture in. Bake for 9 minutes and allow to cool.
Once cool, line the crust with snack size peanut butter cups to cover the bottom.
Cheesecake;
Using an electric mixer, combine cheese and sugar. Add egg and peanut butter. Mix well. Pour over peanut butter cups and spread over crust.
Bake 30 minutes. Cool completely.
Ganache;
In microwave, combine heavy cream and butter. Heat until hot.
Stir in peanut butter chips until melted and smooth. Stir in powdered sugar and pour over bars.
Drizzle;
Melt dark chocolate chips and pour over top, in a decorative design.
Chill until firm before cutting.
Keep refrigerated!
