Ingredients:
Serves 8-10
2 fresh peaches, peeled and sliced
2 large eggs
1 C flour
1/3 C milk
2 Tbsp brown sugar
1 Tbsp unsalted butter, melted
1 tsp baking powder
1 tsp salt
1 tsp vanilla extract
1/2 tsp cinnamon
Canola oil, for frying
Glaze;
1 C powdered sugar
3 Tbsp milk
Directions:
In a large bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
Beat in eggs, milk, butter, and vanilla. Mix until just combined. Fold in peaches.
Heat 2-3 inches oil in a large, heavy-bottomed, pot or Dutch oven, over medium-high heat, to 375 F degrees, or use a deep fryer.
In a medium bowl, pour 3 Tbsp milk, into 1 C powdered sugar. Whisk until smooth, adding more milk for a thinner glaze, or less for thicker.
Lower 1/3 C batter into hot oil (it will sink). Fry for 2-3 minutes, stirring to keep from sticking to the bottom of the pan or fryer, or until golden brown.
Using a slotted spoon, remove from oil and transfer to a paper towel-lined plate to drain.
Drizzle glaze over fritters and serve.
