Ingredients:
1 lb ground beef
1/2 C yellow onion, diced
2 Tbsp taco seasoning
4 oz. cream cheese
8 oz. jumbo pasta shells
10 oz. enchilada sauce (or Taco sauce)
1 C salsa
1 1/4 C cheddar cheese
1/2 C mozzarella cheese
Directions:
Preheat oven to 350 degrees.
Boil pasta shells for about 10 minutes, until cooked al dente.
Cook ground beef and onions over medium high heat until cooked thoroughly. Drain pan.
Stir in taco seasoning and cream cheese. Cook over medium heat until cheese is melted
throughout. Set aside.
Combine enchilada sauce (or Taco sauce) and salsa in a small bowl.
Fill each jumbo shell with meat mixture and place in 9x13 pan.
Repeat until all shells or meat mixture is gone.
Pour remaining enchilada (Taco) sauce/salsa mixture over shells.
Cover pan with aluminum foil.
Bake for 30 minutes.
Remove foil and top with cheeses.
Bake an additional 15 minutes or until cheese is melted.
