Ingredients:
Yield: 16 servings
1 C all-purpose flour
1/2 C dark chocolate, chopped
1 C sugar
1 C plain, low-fat Greek yogurt
1/2 C water
1/2 C unsweetened cocoa powder
1/3 C butter, room temperature
3 Tbsp ground flax seeds
1 tsp vanilla extract
1/4 tsp baking soda
1/2 tsp salt
mini chocolate chips (optional)
Directions:
Preheat oven to 350 F degrees.
Grease an 8x8 baking dish (9x13 if making a double batch).
In a bowl, combine flour, cocoa powder, flax seeds, baking soda, and salt. Mix well.
Microwave butter and chocolate together, stirring every 15 seconds until smooth. Set aside.
In a separate bowl, mix together melted chocolate, yogurt, sugar, and vanilla.
Add flour mixture to the chocolate/yogurt mixture, pour in water and mix until well
incorporated.
Pour batter into baking dish. Sprinkle with mini chocolate chips.
Bake for 20-30 minutes, or until toothpick inserted in center comes out almost clean.
Let cool 10 minutes before serving.
