Ingredients:
Serves 12
3 1/2 lb beef sirloin tip roast, fat trimmed, and cut into cubes
2 pkg brown gravy mix
3 1/2 C water
1 can mushrooms (optional)
2 C long-grain, brown rice
1/2 tsp salt
1 beef bouillon cube
1 small onion, finely chopped
Directions:
Place cubed beef and chopped onion in the bottom of crock pot.
Mix both packets brown gravy with 1 C water. Pour over the beef tips.
Add mushrooms and liquid from can (if using).
Add bouillon cube. Cooker on high for 3-4 hours (or low for 6-8 hours).
Place brown rice, salt, and remaining 2 1/2 C water in a wide, shallow pan. Bring to a boil. Reduce heat to simmer.
Cover and cook for 30 minutes.
Serve over rice or mashed potatoes.
