Ingredients:
Serves 8
1 lb chorizo
4 strips bacon, cooked, chopped
5 large eggs
1 1/2 C cheddar cheese, shredded
8 flour or corn tortillas
cooking spray, as needed
salt and pepper, to taste
sour cream, avocado crema, and/or hot sauce, garnish
Directions:
Preheat oven to 425 F degrees.
In a medium non-stick skillet, over medium heat, add chorizo and cook for 4 to 5 minutes, stirring and breaking up meat.
Add bacon. Cook for another 2 minutes.
In a large bowl, beat eggs.
Add to skillet, cooking for 3 to 4 minutes. Season with salt and pepper, to taste.
Add cheddar cheese. Stir until cheese is melted. Once cooked through, remove from heat.
Warm tortillas in microwave for 10 seconds. Spoon chorizo mixture over half of tortilla and roll tightly to form the taquito.
Line a baking sheet with foil. Place taquitos on tray. Lightly grease with cooking spray.
Bake for 15 minutes.
Cool 3-5 minutes before serving with source cream, avocado crema, and/or hot sauce.
