Ingredients:
Serves 36
Cake layer;
3/4 C brown sugar, packed
1/4 C butter, melted
1 egg, lightly beaten
1 tsp vanilla extract
3/4 C all-purpose flour
1/2 tsp salt
1/4 tsp baking powder
Chocolate Ganache layer;
8 oz. semi-sweet chocolate, coarsely chopped (or dark chocolate)
1 C heavy cream
1 Tbsp unsalted butter, softened
Cream Cheese layer;
2 8 oz. cream cheese, softened
2 eggs
1 C sugar
1 tsp vanilla
Directions:
Preheat oven to 350 F degrees. Lightly grease a 9x13 baking dish.
Combine brown sugar, butter, eggs, and vanilla in a large bowl. Stir until smooth.
In separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until just combined, being careful to not over mix.
Pour mixture into baking dish.
Bake for 18-20 minutes, or until golden brown. Remove from oven and let cool.
Place chocolate in a medium bowl.
Place cream in small saucepan, over medium heat. Bring to a simmer. Pour over chocolate chips. Let stand 5 minutes, or until chocolate has softened, stirring as needed.
Add butter and stir until smooth. Allow cool slightly.
Beat cream cheese, sugar, eggs, and vanilla extract in a medium bowl or mixer until smooth.
Drizzle half the chocolate over cooled cake, followed by cream cheese mixture.
Carefully spread into an even layer.
Drizzle remaining chocolate over the top.
Refrigerate 'til fully chilled before serving.
