Dark's Kitchen
Ingredients:
Serves 4-6

1 1/2 C old fashioned oats
1 C semi-sweet chocolate chips, or dark chocolate
3/4 C flour
1/2 C + 2 Tbsp brown sugar, packed
1/2 C (1 stick) unsalted butter, melted
2 eggs
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt

Directions;

Preheat waffle iron. Grease with non-stick cooking spray.

In a large bowl, combine melted butter and brown sugar. Whisk in eggs and vanilla until smooth.

In a separate bowl, sift flour, baking soda, and salt. Add to wet ingredients, in increments, until well combined.

Fold in oats and chocolate chips, until just incorporated.

Place a heaping Tbsp of dough into each quadrant of waffle iron. cook for 2 minutes, or until golden brown and cooked through.

Repeat with remaining dough, re-spraying griddle as needed.

Transfer to a wire rack and to cool.
