Ingredients:
Serves 8
1 lb rotini or fusilli pasta
1 lb lean ground beef
1 yellow onion, diced
28 oz. canned diced tomatoes
2 Tbsp tomato paste
1 tsp garlic powder
2 Tbsp fresh parsley
2 C cheddar cheese
2 tsp olive oil
salt and pepper, to taste
Directions:
Preheat oven to 375 F degrees. Lightly grease a 9x13 baking dish with non-stick cooking spray.
Cook pasta according to package directions. Drain, mix in 1 tsp olive oil, and set aside.
Heat remaining olive oil in a skillet over medium-high heat. Sauté onions until soft.
Stir in ground beef. Cook until brown, seasoning generously with salt and pepper. Drain fat.
Add tomato paste, diced tomatoes, and garlic powder. Stir and cook until bubbling and slightly thickened.
Spread pasta in an even layer in baking dish.
Spread beef and onion mixture on top. Top with the cheddar cheese.
Bake for 20 minutes, or until cheese is bubbling and edges start to brown.
