Ingredients:
Serves 4-6
1 lb lean ground beef
10-15 slices bacon
1 C cheddar cheese, mild or sharp, grated
1 C Panko or seasoned breadcrumbs
1/2 C milk
1 large egg, lightly beaten
1/2 C ketchup, divided
2 Tbsp brown sugar
1 Tbsp Worcestershire sauce
1 Tbsp Montreal steak seasoning
1 Tbsp garlic, minced
1/2 tsp cayenne pepper
salt and pepper, to taste
Directions:
Preheat oven to 350 F Degrees.
Add ground beef, breadcrumbs, milk, egg, 1/4 C ketchup, Worcestershire sauce, steak seasoning, garlic, cayenne, salt, and pepper, to a large bowl.
Combine ingredients by hand until just incorporated - do not overmix!
Lightly pack mixture into a ball and transfer to a lightly greased loaf pan. Gently press meat to form a flat, even loaf.
With your fingers, dig a trench down the center of loaf. Set scooped out meat aside.
Fill trench with grated cheddar and five slices bacon. Be sure to leave room at top of trench. Seal meat pocket shut with
scooped out meat.
In a small bowl, mix together remaining ketchup and brown sugar. Drizzle half of mixture over top of meatloaf.
Lay remaining strips of bacon evenly across entire loaf top, tucking the ends around side of loaf to prevent curling.
Top evenly with remaining glaze.
Bake for 50-60 minutes, or until cooked through, and bacon is crispy.
